Hello friends! Living in SW Florida, we rarely have even one full day of rainy weather. You can imagine my sincere distress at the past TWO DAYS of non stop drizzle. It’s almost like living in New England again!
In light of the dreary weather, I thought I would share one of my all time favorite recipes ~ because when it’s cold and gray, you must EAT! And eat WELL! (Always my motto, personally).
For this amazing and fairly simple meal, you will need the following:
1 head of kale (head of kale? bunch of kale? bag of kale?) get some kale, please.
2 carrots, peeled and chopped, however you like them *not picky!
1/2 onion, minced fairly small
1 quart chicken broth
1 lb ground pork
1/2 cup grated parmesan – make it fresh, it’s SO worth it!
1cup fine, unseasoned breadcrumbs
salt, pepper, and italian seasoning all to taste
First, combine the pork with your cheese, parm, breadcrumbs and onions. Roll into mini meatballs, and sear in nice hot olive oil until crisp and golden brown on all sides. (Your house is about to smell AMAZING!)
Next, get your broth going. Pour all the stock into a large pot, and roughly chop the kale. Add your carrots, and any left over onion. This is a simple soup, it really doesn’t take much to warm your belly!
Once the stock has been simmering for about twenty minutes, add your meatballs and let that fragrant deliciousness fill your home until the carrots are tender and you’re ready for mealtime!
Serve with warm, crusty italian bread and voila ~ the perfecy meal for a cloudy day. Thank you, Nana š
